நான் ஒரு காபி உபாசஹன். என் முன்னோரும் அப்படித்தான். பின்னே…..!தஞ்சை மண்ணில் பிறந்து விட்டு காபி வெறியனாக இல்லாவிட்டால் எப்படி? காலையில் விழிப்பதே காபி முகத்தில் தான். அப்புறம்… வீட்டிற்கு நண்பரோ உறவினரோ வந்தால் காபி உபசரிப்பு. கூடவே நமக்கும் ஒரு கப். வேலை பளு அதிகமா?குடி காபியை. வேலையே இல்லாமல் போர் அடிக்கிறதா? அதற்கும் காபியே மருந்து. உலகத்தில், பல நூறு வகை காபி தயாரிக்கப் பட்டாலும் நம்ம ஊரின் filter coffeeக்கு முன்னால் நிற்க கூட எந்த காபிக்கும் தைரியம் கிடையாது. பிராமணர்களின் வீடுகளில், காபி தயாரிப்பு என்பது தினசரி ஒரு தவம் போல் செய்யப் படும். இதற்கென எழுதப் படாத விதிகள் உண்டு. இதை முழுக்க அறிய வேண்டும் என்றால், காலச் சக்கரத்தில் சற்றே பின்னோக்கி போக வேண்டும். போவோமா?
பிரிக்கப் படாத தஞ்சை மாவட்டத்தில் ஒரு சிறிய ஊர் அது. மதியம் மணி மூன்று இருக்கும். அந்த ஊரின் அக்ரஹாரத்தில் உள்ள ஒரு வீட்டின் உள்ளே செல்கிறோம். பித்தளை டப்பாவில் உள்ள பச்சை காபி கொட்டையை எடுத்து, விறகு அடுப்பின் மேல் உள்ள மண் வாணாயில் போட்டு வறுக்கிறாள் அந்த வீட்டின் தலைவி. இப்போது என்ன கேட்டாலும் பதில் கிடைக்காது. பதம் தப்பாமல் வறுக்க வேண்டுமே? காபி கொட்டை பொன்னிறம் வரும் வரை வறுக்க வேண்டும். ஆனால் கருகி விடக் கூடாது. கொட்டையிலிருந்து எண்ணெய் லேசாக கசிய தொடங்கும் நேரத்தில் தான் கவனம் தேவை. அதன் பின் எப்போது வறுப்பதை நிறுத்த வேண்டும் என்பது நம் ருசிக்கேற்ப அமையும். பின் வறுத்த கொட்டைகளை மூங்கில் முறத்தில் போட்டு சற்று காற்றாட ஆற விடுகிறார். காபி மணம் மூக்கை துளைக்கிறது. வறுத்த காபி கொட்டையின் வாசனையே நமக்கு புத்துணர்ச்சி தருகிறது. அடடா… காபி வாசனையில் மெய் மறந்ததால் அந்த பெண் எழுந்து சென்றதை கவனிக்கவில்லை.
காபி பில்டர் கீழ் பகுதி
நாம் பார்த்துக் கொண்டிருக்கும் வீட்டின் கொல்லை புறத்தில் ஒரு மாட்டுக் கொட்டகை தெரிகிறது. உள்ளே இரண்டு காராம் பசுக்கள் வாயை அசை போட்டுக் கொண்டிருக்கின்றன. தினசரி பால் தேவைக்காக இந்த மாடுகள் வளர்க்கப் படுகின்றன. ஒரு மாட்டின் பால் வற்றி விட்டால் என்ன செய்வது?. அதற்காக தான் இரண்டு மாடுகள். இதோ அந்த பெண் கையில் ஒரு லோட்டாவுடன் வருகிறாள். காபி கொட்டை ஆறுவதற்குள் பால் கறக்கப் படுகிறது. இளம் சூடான புத்தம் புதிய பால். பசும் பால் தான் காபிக்கு ஏற்றது. அதுவும் அப்போது கறக்கப் பட்ட பால் தான் வேண்டும்.
காபி பில்டர் மேல் பகுதி
பால் உள்ளே செல்கிறது. இப்போது காபி கொட்டை ஆறி விட்டது. கையால் சுற்றி காபி அறைக்கும் மெஷினில் போட்டு அறைக்கிறாள். ரொம்ப நைஸ் ஆகவும் அறைக்கக் கூடாது. காபியில் கசப்பு கூடி விடும். அதிக கொர கொரப்பாகவும் அறைக்க்க் கூடாது. லேசான கொர கொரப்பு. அது தான் filter coffeeக்கு சரியான பக்குவம்.
காபி பொடி
இப்போது காபி பில்டரின் மேல் பகுதியில் பொடி போடப் படுகிறது. நாம் உன்னிப்பாக கவனிக்கிறோம். பில்டரில் போட்ட காபி பொடியில் விரல்களால் மெதுவாக அழுத்தம் கொடுக்கிறார். இல்லை என்றால் பொடியின் மேல் கொட்டும் வெந்நீர் கொட கொட வென்று கீழே இறங்கி விடும். ரொம்ப அழுத்தி விட்டால் வெந்நீர் கீழே இறங்கவே இறங்காது. பழகிய விரல்களுக்கு பக்குவம் தெரியும். 40 கிராம் காபி பொடிக்கு 60 m.l. தண்ணீர் தேவைப் படும். இரண்டு கப் காபி (120 m.l. each) கிடைக்கும். ஒரு கப் காபிக்கு 30 m.l. டிகாக்க்ஷன், 90 m.l. பால் தேவைப் படும்.
காபி பில்டர்
பில்டரில் ஊற்ற வெந்நீர் ரெடியாகிறது. அட சுடு தண்ணீர் தானே என்று அலட்சியம் வேண்டாம். 92 டிகிரி தான் காபிக்கான தண்ணீரின் சரியான கொதி நிலை. தண்ணி தான் கொதித்து விட்டதே என்று அவசரப் படக் கூடாது. அடுப்பை அணைத்து, தல புல வென்று கொதிக்கும் தண்ணீரின் சத்தம் சற்றே அடங்கியவுடன், தண்ணீரை காபி பில்டரின் மேல் பாகத்தில் மெதுவாக விட வேண்டும்.
கறந்த பாலை அடுப்பில் ஏற்றுகிறாள் அந்த பெண். பாலை காய்ச்சி, டபரா டம்ளர்களை ரெடி செய்து முடிக்கிற போது அரை மணி நேரம் ஆகி விட்டிருக்கிறது. கொட்டக் கூழாக டிகாக்க்ஷன் இறங்கி இருக்கிறது.
இனி என்ன செய்ய வேண்டும் என்பதற்கும் விதிகள் உண்டு. டம்ளரில் முதலில் சக்கரையை போட வேண்டும். எவ்வளவு சக்கரை என்பது உங்கள் விருப்பம். ஆனால் ஒன்று. சக்கரை கம்மியாக இருப்பது தான் காபிக்கு நாம் செய்யும் மரியாதை. அப்போது தான் காபியின் அந்த ரம்மியமான மென் கசப்பை அனுபவிக்க முடியும். சக்கரையின் மீது டிகாக்க்ஷனை ஊற்ற வேண்டும். டிகாக்க்ஷன் அளவும் உங்கள் விருப்பம் தான். ஆனால், டிகாக்க்ஷன் சற்று தூக்கலாக இருப்பது தான் நல்ல காபியின் இலக்கணம். இப்போது பால் சேர்க்க வேண்டும். நாம் விரும்பிய நிறம் வந்தவுடன் பால் சேர்ப்பதை நிறுத்தி விடலாம்.
இதோ வெள்ளி டபரா டம்ளரில் காபி திண்ணையில் இருக்கும் குடும்ப தலைவருக்கு கொடுக்கப் படுகிறது. இங்கு ஒன்று சொல்ல வேண்டும். வெள்ளி அல்லது பித்தளை பாத்திரம் தான் காபிக்கு உகந்தது. அதிக நேரம் சூடு தாங்கும். சுவையில் கூட சிறிது வித்தியாசம் தெரியும். அவர் காபி குடிக்கும் அழகை சற்று ரசியுங்களேன். லேசா ஒன்றிரண்டு முறை ஆற்றி விட்டு, தோளில் போட்டிருக்கும் துண்டால் டம்ளரின் கீழே பிடித்துக் கொள்கிறார். கை பொறுக்காத சூட்டை வாய் பொறுக்கிறது. அமிர்த திரவம் சொட்டு சொட்டாக உள்ளே செல்கிறது. சூட்டோடு சாப்பிடும் காபிக்கு தான் சுவை அதிகம். காபியை ஆற வைப்பது காபிக்கு நாம் செய்யும் அவமரியாதை.
சிலர் ஒரு டம்ளர் காபியோடு நிறுத்திக் கொள்வார்கள். சிலருக்கு ஒரு சொம்பு காபி குடித்தாலும் போதாது. மயக்கும் மோகினி போன்றது காபி.
காபி- சில குறிப்புகள்
காபி தோட்டம்
ஒன்பதாம் நூற்றாண்டில், எத்தியோப்பியாவில் ஆடு மேய்த்த ஒருவனால், முதன் முதலில் சுவைக்கப்பட்ட- அராபியர்களால் முறையாக பயிரிடப் பட்ட-அராபியாவில் இருந்து இந்தியா வந்த-காபி, நம் கலாச்சார அடையாளம் ஆகி விட்டது.
காபி பற்றி பேசும் போது, நாம் மரியாதையுடன் குறிப்பிட வேண்டிய ஒருவர்-கும்பகோணம் பஞ்சாபகேச ஐயர். கும்பகோணம் டிகிரி காபியின் பிதாமகன். தண்ணீர் கலக்காத கெட்டி பசும் பாலில் போடப்படும் காபி தான் கும்பகோணம் டிகிரி காபி. பாலில் தண்ணீர் அதிகம் கலந்துள்ளதா என்று அறிய பயன் படுவது Lactometer. தெர்மா மீட்டர் போல இருக்கும் அதை பாலில் போட்டால் மிதக்கும். எந்த டிகிரியில் மிதக்கிறது என்பதை வைத்து தான் பாலின் தண்ணீர் கலப்பு அளக்கப்படும். இதிலிருந்து தான் கும்பகோணம் காபிக்கு டிகிரி அடைமொழி ஆக்கப்பட்டது. இங்கே மாலை நேரத்தில் ஒரு கோதுமை அல்வா , ஒரு ரவா தோசை சாப்பிட்டால் தான் அன்றைய பொழுது கழியும்; இந்த இடத்தை எனக்கு அறிமுகம் செய்தது என் பெரிய தாத்தா; திருமணம் முடிந்த பிறகுதான் தெரியும் இந்த ஹோட்டல் அந்த மாமனாருக்கு வேண்டிய பட்ட நபர் தான் அப்போதைய முதலாளி – பிறகு என்ன கேள்வியே இல்லாமல் அங்கையே குடி காலம் உண்டு. இருந்த
என் கொள்ளுத்தாத்தா வீட்டில் வெள்ளி டபரா டம்பளர், என் தாத்தா காலத்தில் அது பித்தளையாக மாறி இப்போது எவர்சில்வரில் வந்து நிற்கிறது.
நமக்கு தான் அது கும்பகோணம் டிகிரி காபி. கும்பகோணத்தில் அது வெறும் காபி தான். கும்பகோணத்தில் நாள் முழுக்க தெரு தெருவாக அலைந்து திரிந்த அனுபவத்தில் சொல்கிறேன். இப்போது கும்பகோணத்தில் டிகிரி காபி கிடைப்பதில்லை. தமிழகத்தின் பிற பகுதிகளில் இப் பெயர் வணிக உத்தியாக பயன் படுத்தப் படுகிறது.
இன்னொரு விஷயம்… கும்பகோணம் டிகிரி காபியில் ௨௦ சதவீதம் சிக்கரி கலக்க வேண்டும் என்று சிலர் எழுதுகிறார்கள். அது தவறு. காபி என்றாலே ப்யூர் காபிதான். சிக்கரி கலந்தால் அது காபியே அல்ல.
காபி பூ
காபி கொட்டையில் அராபிகா ஒசத்தி. அடுத்து…ரோபஸ்டா. ஒரே காபி செடியில் சில கொட்டைகள் மட்டும் அரிதாக உருண்டையாக இருக்கும். அதான் pea-berry. மற்றவை தட்டையாக இருக்கும். அதை PLANTATION ‘A’ என்கிறார்கள். Pea-berry 40 சதவீதமும் PLANTATION ‘A’ 60 சதவீதமும் கலந்து பொடி வாங்குங்கள். நிறமும், மணமும், சுவையும் பிரமாதமாக இருக்கும். காபி கெட்டியாக இருக்கும். சிக்கரி கலக்க தேவையில்லை.
பச்சை காபி காய்
சென்னை அருகில் கும்பகோணம் டிகிரி காபி வேண்டுமென்றால், சிலாவட்டம் செல்லுங்கள். சென்னை-திருச்சி ஹைவேஸில், tollgate தாண்டி பத்து கிலோ மீட்டர் தூரத்தில் மூன்று காபி கடைகள். காபி பழம்
காபியில் Single Estate Coffee ஒரு Premium Variety. I know this if off topic but I’m looking into starting my own weblog and was wondering what all is needed to get
